Yield: 1 1/2 cups

Ingredients
  • 1 12 ounce jar  roasted red bell peppers, drained and chopped
  • 1/4 cup pitted chopped kalamata or green olives
  • 1/4 cup chopped shallots
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons EVOO
  • 1 tablespoon red wine vinegar
  • 1 small clove garlic, minced
Directions
  1. In small bowl, stir together all ingredients; season. Serve as topping for grilled fish or chicken.
