Quick Veggie Bake

Ingredients

  • 2 teaspoons plus 2 tsp. EVOO
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 1 tablespoon chopped fresh thyme
  • 1 15 1/2 ounce can cannellini beans, rinsed
  • 1 14 1/2 ounce can diced tomatoes
  • 1/4 cup panko
  • 1/4 cup grated parmesan

Preparation

Preheat broiler. In medium pan, heat 2 tbsp. EVOO over medium-high. Add next 4 ingredients; cook 8 minutes. Add thyme; cook 1 minute. Add beans and tomatoes with juices. Partially cover and cook 8 minutes; season. Transfer to 1 1/2-qt. baking dish. Mix panko, cheese and remaining 2 tsp. EVOO; sprinkle over vegetables. Broil until golden, about 2 minutes.
