Poached Eggs and Salsa Over Cheesy Grits

Ingredients

  • 1/2 cup quick-cooking grits
  • 1 tablespoon butter
  • 2 tablespoons grated parmesan
  • 2 poached eggs
  • 2 tablespoons jarred salsa, warmed

Preparation

Cook grits according to package directions. Off heat, stir in butter and 1 tbsp. cheese. Top with eggs, salsa and remaining cheese.
