Pasta Salad with Melon
Makes: 6 servings
- 1 tablespoon each - lime, lemon and orange juice
- 1 tablespoon white vinegar
- 1 tablespoon dijon
- 1/2cup extra virgin olive oil
- 1 pound cooled, cooked rotini
- 1/4cup shredded romano
- 1 1/2cups each - cantaloupe and honeydew balls
- 1 red onion, sliced
- Whisk all ingredients up to pasta; season. Toss with remaining ingredients.
