Mexican Raw Lasagna
Makes: 4 servings
- 1 zucchini, sliced crosswise
- 2 cups fresh ricotta
- 1 summer squash, sliced crosswise
- 2 tomatoes, sliced
- 1/2cup salsa verde
- 1/2cup shredded cheddar
- 2 tablespoons chopped cilantro
- Divide zucchini among 4 plates. Layer each serving as follows: ricotta, squash, ricotta, tomato, salsa, cheddar and cilantro.
