Lemon-Herb Mac Salad

Ingredients

  • 6 ounces mixed or whole-grain elbow macaroni
  • 8 ounces grape tomatoes, halved
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh thyme
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon lemon zest

Preparation

Bring a large pot of water to a boil. Salt the water and cook pasta until al dente; drain. In a medium bowl, toss macaroni with remaining ingredients; season.
