Lamb and Garlic Spinach

Ingredients

  • 2 cloves garlic, minced
  • 2 teaspoons EVOO
  • 2 teaspoons coriander
  • 1 1/3 pounds ground lamb
  • 7 cups baby spinach
  • 1/2 cup Greek yogurt
  • Salt and pepper
  • 1/4 teaspoon smoked paprika

Preparation

Cook half garlic in EVOO. Add coriander and lamb; brown. Transfer to bowl; leave 1 tbsp. fat in pan; brown rest of garlic. Add spinach to wilt. Stir 1/4 cup yogurt into meat; season. Serve lamb on spinach; top with more yogurt and paprika.
