Makes: 4 servings

  • 4 rounds of foccaccia bread, cut into quarters
  • 1 cup Italian sausage
  • 1/3 cup red onion, sliced
  • 1 cubanelle pepper, sliced
  • 1/2 cup parmesan, shredded
  • 1/2 cup mozzarella, shredded
  • Balsamic vinegar, for garnishing
  • Sliced fresh basil, for garnishing
  1. Brown and fully cook Italian sausage. Drain fat and set aside.
  2. Position a rack in the top shelf of the oven and preheat to broil. Arrange foccacia on a large, heatproof platter in a single layer to overlap slightly. Sprinkle the Italian sausage, red onion, cubanelle pepper and cheese over foccacia.
  3. Broil until the cheese is bubbling, 3 minutes. Remove the platter from the oven, top with balsamic vinegar and sliced fresh basil.
