Green Curry with Tofu

Ingredients

  • 1 13 1/2 ounce can coconut milk
  • 2 teaspoons green curry paste
  • 1 tablespoon brown sugar
  • 1 teaspoon fish sauce
  • 1 pound broccolini, cut up
  • 1 12 ounce firm tofu, cubed
  • Salt
  • Cooked brown rice
  • 2 tablespoons chopped basil

Preparation

Heat coconut milk, curry paste, sugar and fish sauce in large pot. Add broccolini and tofu and cook until crisp-tender; season with salt. Serve over brown rice; top with basil.
