Makes: 4 servings
- 4 teaspoons toasted sesame oil
- 3/4 cup frozen peas and carrots
- 1/2 cup chopped scallions
- 2 cups cooked rice
- 2 teaspoons lower-sodium soy sauce
- In a skillet, heat sesame oil over medium. Add peas and carrots, scallions and rice. Cook, stirring, 1 minute. Stir in soy sauce.
