Makes: 4 servings

  • 4 teaspoons toasted sesame oil
  • 3/4 cup frozen peas and carrots
  • 1/2 cup chopped scallions
  • 2 cups cooked rice
  • 2 teaspoons lower-sodium soy sauce
  1. In a skillet, heat sesame oil over medium. Add peas and carrots, scallions and rice. Cook, stirring, 1 minute. Stir in soy sauce.
