Fennel Slaw with Blood Orange Vinaigrette

Ingredients

  • 1/4 cup blood orange juice
  • 2 tablespoons EVOO
  • Salt and pepper
  • 2 cups shaved fennel
  • 1 cup shredded celeriac
  • 1/2 cup chopped parsley
  • 1/3 cup chopped toasted walnuts

Preparation

Whisk orange juice and EVOO; season with salt and pepper. Toss remaining ingredients with dressing.
