Escarole Salad
Makes: 4 servings
- 2 tablespoons fresh lemon juice
- 2 tablespoons EVOO
- 1 tablespoon honey
- 1 bunch escarole, sliced
- 1/2cup shaved parmesan
- 1/4cup golden raisins
- 1/4cup slivered almonds
- In bowl, whisk lemon juice, EVOO and honey. Add remaining ingredients; toss and season.
