Makes: 4 servings

Ingredients
  • 4 cups diced eggplant
  • 1 15 ounce can  diced tomatoes
  • 1 red bell pepper, diced
  • 1/4 cup EVOO
  • 2 tablespoons chopped basil
  • 4 cloves garlic, minced
  • 8 slices provolone
  • 4 buns, split and toasted
Directions
  1. In skillet, cook first 6 ingredients over medium-high, stirring, until vegetables soften, 10 minutes. Season. Top with cheese; cook until melted, 1 minute. Divide eggplant mixture among buns.
