Ingredients
  • 1 tablespoon canola oil
  • 2 scallions, sliced
  • 12 ounces extra-firm tofu, pressed dry, then crumbled
  • 1 1/2 teaspoons curry powder
  • 3 tablespoons mango chutney
  • 1/4 cup cilantro
Directions
  1. In nonstick skillet, heat oil over medium-high. Cook scallions 2 minutes. Stir in tofu and curry powder. Cook, without stirring, 4 minutes. Season. Top with chutney and cilantro.
