Ingredients
  • 6 small cucumbers, such as Persian, halved lengthwise and sliced on an angle
  • 2 Fresno or red jalapeno chiles, thinly sliced
  • 1/2 cup sunflower oil
  • 1/4 cup white wine vinegar or rice vinegar
  • 3 tablespoons coarsely chopped fresh cilantro
  • 2 tablespoons poppy seeds
  • 2 tablespoons sugar
Directions
  1. In a medium bowl, toss the first 6 ingredients; season with salt and pepper. Add the sugar and mix until dissolved.
