Cod with Mushrooms

Ingredients

  • 12 ounces cod fillet
  • 10 ounces oyster mushrooms
  • 3 tablespoons EVOO
  • 1/2 cup fish stock
  • 1/3 cup white wine
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped chives

Preparation

On parchment-lined baking sheet, season cod. Roast at 450 degrees for 12 minutes. In pan, cook mushrooms in EVOO over high, 2 minutes. Stir in stock, wine and garlic; boil 3 minutes. Top cod with mushrooms and chives
