Cheesy Pesto Pizzas

Makes: 8 servings

  • 1 garlic
  • 1 cup flat-leaf parsley leaves
  • 1/2 cup walnuts, toasted
  • 1/4 cup plus 2 tbsp EVOO
  • 4 naan or pita breads
  • 6 ounces sliced gruyere
  1. Preheat oven to 400 degrees . Using food processor, chop garlic. Add parsley and walnuts; pulse to chop. Add EVOO and puree to a coarse paste; season. Divide naan between 2 baking sheets. Spread with pesto; top with cheese. Bake until cheese melts and naan is crisp on bottom, 8 minutes. Cut into wedges
