Carrot-Top Burgers
Makes: 4 servings
- 3 cups shredded carrots
- 2 teaspoons honey
- 1 teaspoon white wine vinegar
- salt & pepper
- 1 1/2pounds ground beef chuck
- 1/4cup grated sweet onion
- 3 tablespoons ketchup
- 2 teaspoons EVOO
- 4 hamburger buns, toasted
- Mix carrots, honey and vinegar; season with salt. Mix beef, onion, ketchup, 1 tsp. salt and 1/2 tsp. pepper; make 4 patties. Heat EVOO in large skillet over medium-high; brown burgers on both sides, about 10 minutes for medium. Serve on buns topped with carrots.
