- 1 large english cucumber-peeled, grated and squeezed dry
- 10 ounces cream cheese, at room temperature
- 2 tablespoons grated white onion
- Salt and pepper
- In a food processor, puree the first three ingredients; season with salt and pepper. Refrigerate the spread for at least 2 hours to allow the flavors to meld (it will keep for up to 3 days).
