Bean & Bacon Coleslaw

Ingredients

  • Green Cabbage Coleslaw
  • 4 ounces chopped bacon
  • 1/3 pound blanched, sliced haricots verts
  • 1/3 pound wax beans
  • 1/3 pound string beans
  • Finely chopped shallot

Preparation

Cook Green Cabbage Coleslaw.

Cook 4 oz. chopped bacon in a skillet until crisp; drain on a paper-towel-lined plate, reserving the fat. Replace half of the cabbage with blanched, sliced haricots verts, wax beans and other string beans. Use the reserved bacon fat in place of the mayo and add finely chopped shallot.
