Makes: 4 servings

  • 1/4 cup red wine vinegar
  • 2 tablespoons dijon mustard
  • 1 tablespoon minced shallot
  • 1/4 teaspoon salt
  • 2/3 cup EVOO
  • Salt and pepper
  1. In a bowl, whisk together all ingredients except EVOO. Slowly drizzle in EVOO, whisking constantly; season with salt and pepper.
Tip Balsamic
  • Swap the red wine vinegar for balsamic.
Tip Herby
  • Add a few tablespoons of chopped fresh herbs. Dill, parsley, tarragon and chives are all good choices!
Tip Orange
  • Add 2 tbsp. orange juice and 2 tsp. fresh orange zest.
