Banana & Rum Jam

Ingredients

  • 1/2 cup sugar
  • 6 bananas
  • 2 tablespoons fresh lime juice
  • 1 teaspoon pure vanilla extract
  • Pinch salt
  • 2 teaspoons dark rum

Preparation

Boil 1/2 cup water and sugar in small pot, stirring, until sugar dissolves. Mash bananas with lime juice, vanilla and salt, then stir into syrup. Simmer, stirring, 20 minutes, adding rum in last 5 minutes. Cool, transfer to jars and chill. Spoon over ice cream or use as a crepe filling.
