- 3 pounds chicken wings, joints separated, tips discarded
- 1/2 teaspoon salt
- 1/2 cup hot sauce
- Celery sticks and bleu cheese dressing, for serving
- Crumbled queso fresco
- Sliced scallions
- Arrange wings on baking sheet and season with salt.
- Broil on top rack of oven, turning once, until skin is golden-brown, 25 minutes.
- Transfer wings and pan juices to bowl. Toss wings with hot sauce. Top with crumbled queso fresco and scallions.
