Asian Fish Pancakes

Ingredients

  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 egg
  • 1 cup cooked flaked fish
  • 2 scallions, sliced
  • 1 red chile, minced
  • 2 teaspoons oil
  • Soy sauce

Preparation

Whisk together 2/3 cup water, flour, salt and egg. Stir in fish, scallions and chile. In 8-inch nonstick skillet, heat 1/2 tsp. oil. Spread 1/3 cup batter to fit skillet. Fry both sides until golden. Repeat with remaining oil and batter. Serve with soy sauce.
