The New Party Reality

The question of how to handle dinner guests' various food issues has become so tricky, we took it to a panel of pros. The majority agreed that it's become the norm to accommodate special diets. "I've started to include a line in my invitations to let guests know that I want to be aware of any dietary restrictions," says Evette Rios, correspondent on ABC's The Chew. "It would be nice to say we should all just eat what's on our plate, but what you eat has become a badge of honor -- and for some, a health concern. That's a trend that's going to stick around."

"Instead of asking about each person's concerns, I serve buffet-style and make sure there are equal amounts of foods that vegetarians, meat eaters and other dieters will enjoy," says Mary Giuliani, a New York City caterer. "If I put out two meats or fishes, I always serve two hearty vegetarian options." As for specific allergies and aversions? "I've found that people who have serious food issues will let you know," Giuliani says. "I've never met a quiet vegan!"
