Start the Sauce: Get your sauce going in a skillet while the pasta cooks. (To get the pasta just right, taste it -- you want it al dente: cooked but still toothsome.) When the pasta's just shy of done, scoop it out of the water and into the sauce -- it will finish cooking in the skillet.

Skip the Strainer: Use a tool called a spider to transfer the pasta to the skillet. The wider wire skimmer scoops up lots of noodles in just one pass.

Be Water-Wise: Don't dump that starchy pasta cooking water! Instead, mix some of it into your sauce to thin it slightly and make it creamy.
