Here at Every Day with Rachael Ray, we’re huge fans of quinoa, which provides more nutrients (and flavor– in our opinion!) than white rice. Pair it with juicy chicken and tender roasted vegetables and you’ve got a delicious plate that you can feel good about cleaning.

That’s why this Meatless Monday, we’re celebrating everything we love about fall.
