It wouldn’t be a proper Mother’s Day without a delicious brunch spread that aims to please all of the mothers in your life. Whether she likes sweet treats or savory goodies, these brunch recipes can be made just as quickly as they’ll be scarfed down! Choose your favorite recipe to be the main star, or mix and match dishes as you please. Just make sure mom doesn’t lift a finger.
Besides delicious, brunch should be a few things: easy to make, fun for the whole family and stress-free. While we love a good Bloody Mary or sangria bar in the early afternoon, sometimes you just need a simple cocktail to wash down your pancakes. That’s why we love this Pineapple 75, a light and fresh champagne cocktail, that’s not-your-average-mimosa. The best part? It only requires 4 ingredients!
1/4 cup pineapple juice
2 tablespoons gin or vodka
Chilled sparkling wine
1 cup ice (freebie!)
In a cocktail shaker, shake ice, pineapple juice and gin until thoroughly mixed; strain into a Champagne flute. Top with sparkling wine. Using a vegetable peeler, cut a strip of lemon peel and curl over rim.
At brunch recently, an Italian friend of mine cancelled my normal brunch drink and ordered me a Bicicletta instead. “Trust me,” he said, laying on the Italian accent of course, “you’ll love it.” And he was right. Bitter, sweet, effervescent and not too strong, this vibrantly colored cocktail is a must for brunch or a summer picnic when you wanna mix it up. The Bicicletta supposedly gets its name from the old Italian men who would wobble and swerve on their “biciclettas” (Italian for “bicycles”) on their way home after having a few too many to drink. Personally, I think it’s best made with a dry Italian white wine, such as pinot grigio, as it balances the bitter components of savory Campari. Play around with the amount of club soda you add too. The goal is to add enough club soda to make the drink light and sparkling, but not so much that you dilute the drink and it’s bright red color.

Makes 1 drink
2 ounces Campari, an Italian liqueur
2 ounces white wine, preferably Italian
- Combine Campari, white wine and club soda.
- Gently stir to mix–you don’t want to deflate the carbonation.
- Garnish with lemon slice and enjoy.
When I was younger, the idea of drinking tomato juice and alcohol, separately or together, seemed like some sort of method of torture.
