What a way to start off the morning! Blogger and Instagram user @greedygirlcooks is already gearing up for Valentine’s Day with all-chocolate-everything recipes, including  this drool-worthy Chocolate French Toast! Adding cocoa powder to the batter and making a chocolate maple syrup turns a breakfast staple into a morning masterpiece. We don’t think we can wait until February 14th to try this one out! As if these waffles and home fries aren’t beautiful enough, our mouths seriously started watering when we read what’s in them. Instagram user @jenjenkk cooked up asiago & rosemary savory waffles with sweet potato home fries and fresh maple syrup. We always love a good B-L-D (breakfast, lunch or dinner) recipe, and this one definitely fits the bill.

Instagram user @nutellasum‘s vegan pancakes with chocolate pumpkin butter and fresh strawberries are seriously putting us in the breakfast mood! We love her genius idea of adding cocoa powder to pumpkin butter, and those juicy strawberries make for a beautiful, magazine-worthy presentation. Meatless Monday: Easy Egg Bake

Go vegetarian this Meatless Monday with an Easy Egg Bake inspired by a Fried Egg and Spicy Tomato Sauce dish I had at Danny Meyer’s Maialino. As they’re unfortunately no longer serving the dish on their brunch menu, I decided to re-create the dish and add a bit of Southern flavor–in the form of cheese grits(!)–into the dish.

 

Feel free to get creative and add mushrooms or more veggies to grits or sauce. Serve this dish as either a hearty breakfast or brunch or as a meatless lunch or dinner with a side salad any time. Even better, make all of the components a day (or night) in advance and build the grits and tomato sauce layers and store in the fridge until you’re ready to top with eggs and bake everything off.

As I sometimes go about cooking with a no-recipe philosophy, here’s a quick talk-through of how to make this tasty dish:

  • Make Moroccan-inspired spiced tomato sauce and let simmer to intensive flavor
  • Make grits and add cheese
  • Layer grits into a baking dish, layer tomato sauce on top of grits, crack two eggs on top and sprinkle with grated cheese
  • Bake until eggs are cooked and other layers are warmed. Top with herbs (optional) and serve.

This week’s Featured Cook, The Sparkle Kitchen, has delighted us week after week with her tasty food photos of everything from empanadas to ravioli and granola to cupcakes. We especially loved this photo of her “his and hers” meals because it reminded us that half the fun of dining is eating with someone else–even when they’re not eating the same thing as you! While we don’t necessarily see ourselves making two separate meals for dinner anytime soon, we appreciated The Sparkle Kitchen’s carnitas for him and sweet potato, chevre cheese, crushed red pepper hash with cilantro, avocado, tomato and corn for her. Thanks for sharing your photos with us and we can’t wait to see what you cook up next!

How to Roast Peppers

Roasting peppers teases out their sweetness and gives them a smoky edge (And they make Rachael’s Birds in a Nest with Peppers & Sausage oh so good.) Jarred roasted peppers are a good shortcut, but you’ll get a fresher flavor and firmer texture by making your own. It couldn’t be easier: Follow our to-do tutorial below, heat up the broiler and get cooking!

1. Place the peppers on a rimmed baking sheet or broiler pan and broil, turning often with tongs, until blistered all over, about 8 minutes.

 

 

 

 

 

2. While warm, stick the peppers in a glass or metal bowl and cover tightly with plastic wrap. Let stand until cool enough to handle.

3. Remove the peppers from the bowl and peel off the skin. Cut out the stem and ribs, toss the seeds and you’re done!
