Cocktails, Anyone? The Rosy Mimosa

Just two short days stand between you and the weekend, and even less time stands between you and happy hour. No matter what time your drinking activities begin, you should enjoy this blushing twist on a brunch classic: The Rosy Mimosa.

 

 

Not only do you swap out champagne for sparkling rosé wine, but also try using the juice of a Cara Cara orange, an extra juicy, low-acidity navel orange that’s pretty in pink. Here’s the full recipe:

 

Rosy Mimosa

1 part Cara Cara orange juice

2 parts sparkling rosé

 

Combine juice and rosé in a champagne flute and enjoy! Does it get much simpler than that? Cheers!

Technique Tuesday: Hash Brown Heaven!

Buy a bag of frozen shredded spuds, then mix, pan-fry and top your way to the best-ever breakfast potatoes.

1. Lumberjack Special

Stir it in: chopped browned breakfast sausage

Top it off: butter, maple syrup

 

2. Spicy Ranchero

Stir it in: shredded pepper jack cheese, spicy salsa

Top it off: sour cream, chopped cilantro, squeeze of lime

 

3. Cheeseburger & Fries

Stir it in: browned ground beef, shredded yellow cheddar

Top it off: pickle slices, finely chopped onion

 

4. Veggie Confetti

Stir it in: shredded carrots, parsnips and beets, squeezed dry

Top it off: chopped fresh thyme, sage and parsley

 

5. French Onion

Stir it in: caramelized onions, chopped fresh thyme

Top it off: shredded gruyere

 

6. Everything but the Bagel

Stir it in: sliced red onion, capers

Top it off: sliced smoked salmon, cream cheese

Meatless Monday: Easy Egg Bake

Go vegetarian this Meatless Monday with an Easy Egg Bake inspired by a Fried Egg and Spicy Tomato Sauce dish I had at Danny Meyer’s Maialino. As they’re unfortunately no longer serving the dish on their brunch menu, I decided to re-create the dish and add a bit of Southern flavor–in the form of cheese grits(!)–into the dish.

 

Feel free to get creative and add mushrooms or more veggies to grits or sauce. Serve this dish as either a hearty breakfast or brunch or as a meatless lunch or dinner with a side salad any time. Even better, make all of the components a day (or night) in advance and build the grits and tomato sauce layers and store in the fridge until you’re ready to top with eggs and bake everything off.

As I sometimes go about cooking with a no-recipe philosophy, here’s a quick talk-through of how to make this tasty dish:

  • Make Moroccan-inspired spiced tomato sauce and let simmer to intensive flavor
  • Make grits and add cheese
  • Layer grits into a baking dish, layer tomato sauce on top of grits, crack two eggs on top and sprinkle with grated cheese
  • Bake until eggs are cooked and other layers are warmed. Top with herbs (optional) and serve.

This week’s Featured Cook, The Sparkle Kitchen, has delighted us week after week with her tasty food photos of everything from empanadas to ravioli and granola to cupcakes. We especially loved this photo of her “his and hers” meals because it reminded us that half the fun of dining is eating with someone else–even when they’re not eating the same thing as you! While we don’t necessarily see ourselves making two separate meals for dinner anytime soon, we appreciated The Sparkle Kitchen’s carnitas for him and sweet potato, chevre cheese, crushed red pepper hash with cilantro, avocado, tomato and corn for her. Thanks for sharing your photos with us and we can’t wait to see what you cook up next!
