Ingredients
  • 2 teaspoons butter
  • 1/2 cup finely chopped white onion
  • 2 cups sliced strawberries
  • 1/4 cup plus 2 tablespoons port wine
  • 2 tablespoons sugar
  • 2 tablespoons fresh lemon juice
  • 3/4 teaspoon fresh thyme leaves
  • 2 cups raspberries
  • 2 cups blueberries
  • 1/2 teaspoon ground ginger (optional)
Directions
  1. In a large saucepan, melt the butter over medium heat. Add the onion and cook until softened, 2 to 3 minutes. Stir in the strawberries, port, sugar, lemon juice and thyme and cook until the strawberries begin to soften, 2 to 3 minutes. Add the raspberries and blueberries and cook until the blueberries swell and the compote thickens slightly, 2 to 3 minutes. Stir in the ginger, if using. Serve warm or at room temperature.
