Bourbon lends a sweet, cinnamonlike flavor tomeat, and it marries well with acidic fruit, tangymustard and salty soy sauce, says Albert Schmid, author of The Kentucky Bourbon Cookbook.

Makes: 4 servings

  • 1 cup orange marmalade
  • 1/3 cup dijon mustard
  • 1/4 cup bourbon
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon finely chopped garlic
  1. Combine 1 cup orange marmalade, 1/3 cup dijon mustard, 1/4 cup each bourbon and soy sauce, 2 tablespoons sesame oil, 1 tablespoon finely chopped garlic.
