Cut beets and apples into similar-sizewedges and thread onto skewers withsmall red radishes; brush with extra-virginolive oil and grill. Serve with horseradish-spikedunsweetened whipped cream.

- Bacon vinaigrette
- Arugula ribbons
- Grill skewered radicchio wedges and halved belgian endives. Drizzle with bacon vinaigrette and garnish with arugula ribbons.
