Around the World Wraps

- 3 tablespoons vegetable oil
- 1 pound ground beef
- 3 teaspoons curry powder
- Salt and pepper
- 12 rice-paper wrappers
- 3/4cup shredded carrot
- 5 scallions, sliced on an angle
- 1 1/2cups potato sticks
- 1 cup flat-leaf parsley, chopped
- In a large skillet, heat the oil over medium-high heat. Add the ground beef and curry powder, season with salt and pepper and cook, breaking up the meat, for 5 minutes.
- In a bowl of warm water, soak a wrapper for 15 seconds; place on a work surface. Spoon 2 tablespoons beef across the bottom third; top with carrot, scallions, potato sticks and parsley. Roll the bottom flap up over the filling, fold in the sides and finish rolling. Repeat with the remaining wrappers and fillings.
