Soy-Citrus Cod

Makes: 4 servings

Ingredients
  • 4 skinless cod fillets
  • 2 small zucchini, sliced
  • 3 yellow potatoes, thinly sliced
  • Salt and pepper
  • 1/4 cup melted butter
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
Directions
  1. Season fish and veggies. Mix butter, soy sauce, lemon juice and zest. Layer potatoes on 4 pieces foil. Top with zucchini, fish and soy butter. Seal packets; bake at 400 degrees for 25 minutes.
