- 4 artichokes--stems trimmed, top thirds sliced off and thorns snipped
- 4 lemon quarters plus 2 tsp. lemon juice
- 1/2 cup mayonnaise
- 1 clove garlic, grated
- Cook artichokes in boiling, salted water with lemon quarters until outer leaves pull off easily, 30 to 40 minutes. Combine mayo, garlic and lemon juice for dipping sauce.
