Southwestern Meatballs

Makes: 4 servings

Ingredients
  • 1 pound ground turkey
  • 2 serrano chiles, seeded and finely chopped
  • 1 onion, grated
  • 2 cloves garlic, grated
  • 1/2 cup breadcrumbs
  • 1 teaspoon ground cumin
  • Salt and pepper
  • 4 ounces monterey jack cheese, cubed
  • 2 teaspoons EVOO
  • 1 28 ounce can  diced tomatoes
Directions
  1. Mix together turkey, serranos, onion, garlic, breadcrumbs, cumin, 1 tsp. salt and 1/2 tsp. pepper. Form 16 meatballs around cheese cubes. In skillet, heat EVOO over medium heat. Add meatballs and cook until browned on all sides; add tomatoes and simmer until cooked through, about 10 minutes.
