- Chopped ripe peaches
- Choped jalapeno
- Choped red onion
- Chopped cilantro
- Lime juice
- Shredded coconut
- Tortilla chips
- Monterey jack cheese
- Coarsely chopped cooked shrimp
- Make a salsa of chopped ripe peaches, jalapeno, red onion and cilantro; season with lime juice and shredded coconut. Arrange tortilla chips on a baking sheet and top with the salsa, then sprinkle generously with monterey jack cheese and bake until bubbling. Top with coarsely chopped cooked shrimp.
